Pistou soup from Pays d’Apt
Pistou is the Provençal word for Basil.
To make this soup, you will first have to visit the local market. You will need the following vegetables: green beans, red and white “haricots cocos” (beans), courgettes, carrots, potatoes and tomatoes, not forgetting garlic, basil and olive oil.
Peel, shell and cut-up the vegetables. Put everything into a big pot, cover with lots of water, season and leave to cook.
To prepare the Pistou you will need a pestle and mortar to crush the garlic and basil, mixed with salt.
Time to eat!
